The name AGER stands for high-quality top products in the areas of game meat, bacon, game smoked products and game ready meals and is owned by Josef Ager Jr. in the second generation. guided. This and around 100 employees do their best every day to meet customer requirements and wishes.

Venison cutting
Deer, roe deer, wild boar, chamois – all types of big game are cut up, processed and refined by us in the game cutting plant, which was built in 1995, exclusively in accordance with the strict requirements of the Austrian Food Code and a quality assurance system with integrated HACCP.
At peak times, around 80 employees process up to
15 tons of raw game per day. That’s around 900 deer, 200 stags or 300 wild boars.
For decades we have been considered a valued supplier and business partner to companies in Austria, Switzerland, Germany, France, Belgium and Italy.
Smoked products production
In the smoked goods company, which was founded in 1971, we produce all kinds of pork bacon and refine game meat into delicious specialties. Loin, pork belly and bacon are produced in a traditional way and are subject to precise manufacturing specifications (PGI). Since we attach great importance to regional origin, only selected first quality pork from Austria (4xAT) is used for production.
To produce our fine wild ham from deer, roe deer or wild boar, we only use the best and juiciest leg parts, which are lovingly cut in our cutting plant in order to guarantee the most consistent quality possible.
All raw cured products are cured with a special salt and spice mixture, gently cold smoked and matured under controlled conditions until they meet the required quality standards.
A small but fine range of wild herbs and wild salamis from deer, roe deer and wild boar rounds off our range of smoked products. To produce the wild raw sausages, we only use the best game meat, which is mixed with first-class pork and traditional spices in the right mixture, lightly smoked and extensively air-dried.
1971 to today…
2018
The game cutting operation is being expanded to the east in order to create new storage capacity for the constantly increasing volume of incoming goods.
2017
Due to the strong demand for raw wild sausages, raw sausage production is being expanded and modernized.
2016
The factory outlet will be closed. 200 m next to the main building is the Genusswelt , which offers an extensive range of Ager as well as regional specialties.
2014
A business park is being built opposite the game cutting operation, where, among other things , employee apartments will be rented in order to offer the staff attractive accommodation.
2008
AGER Speck is now produced and offered on the market under geographically protected indications (PGI).
2006
Since the demand for quality game is constantly increasing, game purchasing is being intensified . The venison from the south and east of Austria is delivered by additional trucks every week.
2005
A quality assurance system is established, which is gradually continued until it is ready for certification according to the “International Featured Standard” (IFS Food). This makes AGER one of the first game processors in all of Europe to refine meat to such high quality standards.
2004
The company is changing course and withdrawing from supplying the catering industry. The focus is now entirely on producing bacon and smoked products, cutting and refining game meat and selling it to wholesalers. A regulated supply of game is ensured
through our own game collection point in Lower Austria .
2000
The sole proprietorship is converted into a company and taken over by Josef Ager junior in the second generation.
1995
The most modern EU game cutting plant in Europe is being built near the Ager headquarters . Around 2,200 tons of game are cut up and processed here every year according to the highest quality standards.
1990
Ager starts exporting . With the game specialties he can establish himself on the European market in a very short time. More than half of production goes to countries such as Switzerland, Germany, France and Belgium.
1986
Ager now employs 70 people .
1978
Major renovation work is being carried out and the company is approved as an EU company (AT 70244 EG) to produce bacon and sausage specialties.
1971
Josef Ager senior buys the site of a sawmill directly on the B178 and builds the AGER company building . In addition to selling trout from our own farm, eggs, poultry and frozen products, the game hunted in the region is cut up, processed and delivered to restaurants in Tyrol and Salzburg.
